Cheese Potato & Smoked Sausage Casserole

A casserole popular in the 70’s has made a comeback with its cheesy creamy goodness. A true hit for themen in the house for sure!

  • Yields: 6 Servings

Ingredients

3 cups yellow potatoes cubed and boiled until just tender

4 Tbsp butter

4 Tbsp flour

2 cups milk

½ tsp salt

¼ tsp pepper

½ lbs Velveeta cheese, diced

½ cup old cheddar cheese shredded

1 lbs smoked sausage

½ tsp paprika

Directions

1Cut sausage in half lengthwise and cut into half moon pieces. Cook in frying pan until golden brown.

2Place cooked potatoes in a casserole dish. Add cooked meat and toss until well combined.

3Mix all other ingredients (except cheddar and paprika) into the frying pan and heat until melted and warm.

4Pour over potatoes and meat. Sprinkle with cheese and paprika.

5Bake in preheated 350 oven for 35-45 minutes or until golden brown.

6Note: Can substitute sausage with hot dogs, ham, chicken or whatever meat you like.
