EmailTweet 0 Full-screen Chicken Roast By Jodi Meat April 25, 2016 This recipe is Day 2 of the Alzheimer's Menu Blog Yields: 6 Servings Ingredients540 g Whole Raw Chicken Directions 1Defrost required amount of frozen product in refrigerator at <40 F (4 C) until completely thawed Preheat oven to 350 F (177 C) 2Place chicken onto rack in a roasting pan with a small amount of water in bottom 3Bake in preheated 350 F (177 C) oven for 45-60 minutes Ensure the product reaches an internal temperature >185°F/85°C for a minimum of 15 seconds 4Remove from pan, place on sterile cutting board, cover and let rest for 10-15 minutes. Slice chicken and layer slices in a serving pan. 5Cover and hold for service >140 F (60 C) for a maximum of 2 hours.
