Coconut Macaroons

If you love coconut then you need to try this super simple coconut macaroon recipe. Bursting with coconut flavour and you can add a little melted chocolate to finish them off.

  • Yields: 24 Servings


2/3 cups flour

5-1/2 cup shredded sweetened coconut

½ tsp salt

1 (14 ounce) can sweetened condensed milk

2 tsp vanilla extract

1 tsp almond extract

4 ounces of white or semi-sweet baking chocolate


1Preheat oven to 350.

2Line baking sheets with parchment paper.

3Stir together flour, coconut and salt. Stir in sweetened condensed milk and extracts. Stir until well combined.

4Drop dough (2 Tbsp at a time) onto cookie sheets.

5Wet hands slightly and press down any pieces of coconut so they don’t burn.

6Bake for 11 minutes or until the bottoms are brown and the tops are golden. Cool completely.

To Dip:

1Melt chocolate of choice according to package directions. Dip the bottoms or tops. Let dry.
