Cucumber Tomato Avocado Salad

When the farmer’s markets or your own gardens are bursting with produce, we all like to try new recipes to use up the summer bounty. This is a light salad sure to please a crowd. It can also be used as an entrée if you add a piece of grilled chicken.

- Yields: 4 Servings (as a side salad)
Directions
1Place chopped tomatoes, sliced cucumber, sliced red onion, diced avocado and chopped cilantro into a large bowl.
2Drizzle with the oil and lemon juice. Toss gently to combine.
3Just before serving, toss with salt and pepper.
Note:
1If you think cilantro tastes like soap (you either hate it or love it) you can always substitute with fresh dill.
