When the farmer’s markets or your own gardens are bursting with produce, we all like to try new recipes to use up the summer bounty. This is a light salad sure to please a crowd. It can also be used as an entrée if you add a piece of grilled chicken.

Yields: 4 Servings
Ingredients
1 lbs tomatoes
1 English cucumber
½ medium sliced red onion
2 avocados, diced
2 Tbsp oil
2 Tbsp fresh lemon juice
¼ cup cilantro, chopped
¾ tsp salt
1/8 tsp pepper
Directions
1Place chopped tomatoes, sliced cucumber, sliced red onion, diced avocado and chopped cilantro into a large bowl.
2Drizzle with the oil and lemon juice. Toss gently to combine.
3Just before serving, toss with salt and pepper.
1Note: If you think cilantro tastes like soap (you either hate it or love it) you can always substitute fresh dill.
