Sweet and delicious pineapple on the BBQ is a great way to add to flavour to salsas or your favorite vanilla ice cream.
- Yields: 1 Whole Pineapple
1Cut top and bottom off of the pineapple. Peel by standing up and cutting off the peel. Once all the peel is gone, cut in half lengthwise and then into quarters. Cut the core out. Place the 4 pieces into a Ziploc bag and add the cinnamon and sugar. Seal bag and shake until pineapple is coated. Place in the fridge for a couple of hours.
2Remove bag from the fridge and place quarters on the grill. Cook until tender and caramelized about 20 minutes. Remove from the heat and cut into chunks as desired.
3Don’t throw out the liquid that has accumulated in the bag. Add to baked goods, smoothies or as a sauce on the ice cream.
