Directions
1Prepare pasta as per manufacturer’s directions, drain Portion to serving pans
2Cover and hold for service >140 F (60 C) for a maximum of 2 hours. Discard any remaining product after service
3Prepare sauce as per regular recipe
4Portion to serving pans
5Cover and hold for service >140 F (60 C) for a maximum of 2 hours Discard any remaining product after service
6For service spoon 83 mL of sauce over pasta
Marinara Sauce
1Clean and wash tops of cans
2In a large pot over medium high heat, heat oil, then stir in onions, and garlic, sautéing until onions translucent, garlic aromatic
3Stir in both types of tomatoes and bring to low boil
4Reduce heat, add remaining ingredients, stirring until fully combined, cover and allow to simmer 2-3 hours, stirring occasionally, then if needed uncover and simmer until desired consistency is reached
5Portion to serving pans
6Cover and hold for service >140 F (60 C) for a maximum of 2 hours Discard any remaining product after service
