Ponchiki – Russian Donuts

Who doesn’t love donuts? These are easy to make and you have some flavour options to make them a family favorite. Golden and crunchy on the outside and fluffy on the inside. These are a Russian delight.

  • Yields: 25 Servings (makes 50 ponchiki)

Ingredients

2 cups ricotta cheese

3 eggs

¾ cup sugar

2 tsp vanilla

½ tsp salt

1-1/2 cups flour

1 tsp baking soda

2 quarts oil for frying

Powdered sugar to sprinkle after frying

Directions

1Pour oil into a heavy bottomed pot and heat the oil to 375.

2Meanwhile, mix cheese, eggs, sugar vanilla and salt.

3Combine the flour and baking soda and mix well. Add the flour mixture to the cheese mixture and stor to combine.

4Using a small scoop, scoop dough into the oil in batches.

5Cook until they are golden brown on both sides.

6Make sure the oil does not go below 350 as the donuts will take on too much oil. If the oil is too hot, then the donuts will brown too quickly and not be cooked in the middle.

7Once browned, take them out of the oil and place them on paper towels to drain. Sprinkle with powdered sugar.

Note:

1You can flavour the dough before cooking or you can add flavour to the powdered sugar.
