Roasted Brown Sugar Pineapple

Roasted sweet pineapple can be used as a dessert with ice cream or turned into a salsa for fish or meats. Try not to eat it right out of the oven…. too good to resist.

  • Yields: 4 Servings


4 cups fresh or frozen pineapple (fresh is best for this recipe)

¼ cup brown sugar

1/8 tsp salt

½ tsp cinnamon


1Preheat oven to 400.

2Cut pineapple into chunks of equal size.

3Combine pineapple with sugar, salt and cinnamon. Toss to coat.

4Place into a large baking dish and bake for 20-25 minutes stirring half way through.

5Cook until pineapple is a golden brown. Careful not to burn.
