Fresh tomatoes and butter…. what could be better? Super flavourful chicken in a fresh butter tomato sauce. This is best served over pasta to help soak up all the yummy sauce.

Yields: 4 Servings
Ingredients
1 lbs boneless skinless chicken breasts
Salt and pepper to taste
¼ cup olive oil
6 tomatoes, diced
3 cloves garlic, minced
Handful fresh basil cut into ribbons
¼ cup salted butter
Directions
1Pound the chicken so it is even thickness. This will help it cook faster and more evenly.
2Sprinkle chicken generously with salt and pepper.
3Prep the tomatoes, garlic and basil. Set aside.
4Heat olive oil in a large skillet. Place chicken in the oil and cook until golden brown on both sides. Set aside.
5Give the oil a few minutes to cool, add the tomatoes and return to the heat.
6Simmer to cook down the tomatoes until it forms a chunky sauce.
7Add the garlic and butter and stir until the butter is melted.
8Add the chicken back in and let it sit for a few minutes to soak up the sauce.
